They should be sharpened whenever the conditions and edges warrant it. A sharp acute angle edge might be worse for a skier making windshield-wiper turns (swish, swish, side to side). Surface roughness testers have 4 figure price tags. If it looks smooth, it's good. I don't know if a sharpness tester could fit a ski edge.
